We roughly followed this recipe here but we tweaked it a bit. My favorite part about this dish is that it can all be cooked up in one pot so clean up is a breeze!
Ingredients:
2 teaspoons olive oil
2 boneless skinless chicken breasts, cut
into bite-size pieces
8 ounces canadian bacon, diced
8 ounces Italian Sausage
1 onion, diced
1 green bell pepper, diced
2 tablespoons chopped garlic
1/4 teaspoon cayenne pepper
1/2 teaspoon onion powder
salt and ground black pepper to taste
2 cups orzo pasta
4 cups chicken stock
3 bay leaves
2 teaspoons Worcestershire sauce
1 teaspoon hot pepper sauce
Directions:
1. Heat oil
in a large pot over medium high heat. Saute chicken and sausage until lightly
browned, about 5 minutes.
2. Stir in onion, bell pepper, Canadian bacon and garlic. Season
with cayenne, onion powder, salt and pepper. Cook 5 minutes, or until onion is
tender and translucent.
3. Add pasta, then stir in chicken stock and bay leaves.
Bring to a boil, then reduce heat, cover, and simmer 20 minutes, or until pasta is tender.
4. Stir in the Worcestershire sauce and hot pepper sauce. Top with Parmesan to make it extra indulgent!
I may have forgotten to take a picture of the final final inthebowl product because I was too busy eating it up. :) This made at least 6 servings and heats up great the next day. We didn't even add any sides to it and we were completely satisfied!
